ARTICHOKE PÂTÉ
Artichoke of Schito is a subtype of the Romanesco variety, from which it differs in the period of early production and the color of the bracts, green with purple hues. The earliness is given by the particular mildness of the climate and the habit of regenerating the plants every year. Cultivated in the countryside of Castellammare di Stabia, in reclaimed lands of marshy origin, which have remained extremely fertile.
Ingredients: Violet artichokes from Castellammare, extra virgin olive oil monocultivar Ravece, provolone del Monaco D.O.P. (raw cow’s milk, mixed veal rennet, salt), parsley, pepper, potato starch, wine vinegar, garlic.
