The flavor is delicate, but at the same time intense, persistent, full. You will recognize hints of undergrowth, hay, flowers and a light note of nuts and mushrooms. The scent is that of the high mountains, where the air is pungent, nature uncontaminated, alive. The slow maturation – of at least 7 months – gives the pasta a straw-yellow color with timid cobalt-colored veins and a crumbly consistency, but which melts in the mouth, caressing the taste buds one by one. In a word? Unmistakable.
