The “Prodotto di Montagna” quality project is a project of the Parmigiano Reggiano Consortium to support the added value of cheese produced in high altitudes. To obtain certification and be able to affix the brand to the product, more than 60% of the forage must be grown in mountain areas and 100% of the milk must be milked in high-altitude stables. The maturation phase must then be carried out in the mountain area until the twelfth month. The production coincides with that of the Parmigiano Reggiano produced in the Emilian plain, i.e. the use of milk from two milkings added with animal rennet which allows it to coagulate and subsequently put it into shape. The minimum seasoning is 12 months after which it is released and marketed.
