The vinification technique for Graziano Pra amarone first involves a selection of dried grapes in crates for about two months, then crushing and destemming, vinification with the délestage method and alcoholic fermentation followed by malolactic fermentation for 15 days in vertical steel vats. The wine is then left to rest for 2 years in Allier tonneaux and barriques and then blended for the last year in 20 hectolitre Allier oak barrels. A year of refinement in the bottle follows before being marketed.
