CASALE DEL GIGLIOThe Shiraz from Casale del Giglio is a Lazio IGT/IGP red wine made from 100% Syrah grapes. It undergoes cold maceration to extract aromas and color, followed by vinification with periodic punch-downs and a 10–12 day fermentation. Aged in barriques for 8–12 months and 6 months in the bottle, the wine has a ruby red color with violet hues, intense fruity and spicy aromas, and a soft, tannic palate. Suggested pairing: grilled tuna.
