The grapes were left in pre-fermentative maceration for 2 days and once the alcoholic fermentation was completed, there was a post-fermentative maceration of about a month. Once the wine was drawn off, it remained on the fine lees with continuous batonnage until June, after which it was put on the clean lees and bottled in August 2019 and has remained in the glass until today. Fermentation and aging in concrete vats of 25hl, at increasingly longer intervals, in the descending moon day of flowers, I carry out a remuage for each individual bottle. The taste-olfactory sweetness of its mix of black cherry / vanilla / cinnamon is the strong point of this magnificent wine. Magnificent because it is capable of being caressing, balsamic and persuasive despite its dense load of extracts and tannin. Fleshy flesh, then, reveals the touch, with a flavour that does not linger or sink into bitterness, but soars on the enveloping roundness of its harmonious forest fruit, of which the blueberry is the master. It has an intact oxidative turgidity and a dream-like power and persistence.
