It offers a broad and intense bouquet, with spicy aromas, tobacco, leather, cocoa, and balsamic notes. Elegant and highly persistent on the palate. It pairs well with roasted red meats, game, and aged cheeses. Serve at 18°C in large balloon glasses.
Santa Vara takes its name from the vineyard owned by my daughter, from which we produce this wine.

• Altitude: Sloping at 400 meters above sea level
• Grapes: 100% Aglianico
• Training system: Guyot
• Maximum yield per hectare: 70 quintals of grapes / 45 hl of wine
• Plant density: 6,000 vines per hectare
• Harvest period: First ten days of November
• Vinification technique: Manual harvest. Fermentation in steel tanks in contact with the skins for 15 to 20 days at a controlled temperature between 20°C and 24°C
• Aging: 12 months in steel, 12 to 18 months in French oak tonneaux, and at least 12 months in the bottle
• Alcohol content: 14.5% vol
