SECONDO MARCORipasso di Secondo Marco is a full-bodied and intense Valpolicella that ages in barrels of different sizes for at least 12 months. It has a bouquet that alternates notes of black cherries, blackberries and plums with hints of tobacco and cinnamon. On the palate it is warm and balanced, with a silky tannic texture.
This Valpolicella Classico Superiore Ripasso is made by the Secondo Marco winery starting from a cut of Corvina – which leads the blend with a 60% -, Corvinone, Rondinella, Oseleta, Coratina and Pipiona. These varieties grow in the parcels located near Fumane di Valpolicella and are grown with the pergoletta system. The must ferments on the skins for two weeks, and then re-ferments a second time by “passing over” on the Amarone pomace. The following refinement takes place for 12 months in 50 hectolitre barrels, to then continue the maturation in small barrels whose capacity is smaller, of only 7 hectolitres. At the end of this period the wine is ready to be bottled.
