ENRICO SERAFINOGrapes: 100% Pinot Noir
Vinification: Grape bunches are hand-sorted on a vibrating table and softly pressed in a nitrogen inert environment with yield in freerun must of 45%. This process is “100% screw conveyor free” to handle grapes as gently as possible. The must is fermented in stainless steel vats at controlled temperature and kept 6 months on lees with bâtonnage.
Tasting notes: The straw yellow color combined with the persistent and complex aroma that unfolds between lime blossoms, honey, ripe white fruit, citrus fruits and pastry, alternating with bread crust and yeast prepare for the very fine perlage with a long persistence and an austere, full, creamy but at the same time agile and vibrant flavor, with great length and minerality.
