The manually harvested grapes arrive in the cellar intact, after destemming and crushing they are subjected to soft pressing. The free-run must, after cold static clarification and inoculation of selected yeasts, ferments at a temperature of around 15° for around 20/30 days.
Organoleptic characteristics:
Pale straw yellow color and delicate fruit scent that brings back the unmistakable Mediterranean smells of the area of origin. The flavor is broad and balanced with a slight dominance of the acidic note to support the freshness of the aromas.
