The Chablis AOC Premier Cru 'Mont de Milieu' 2023 from Chateau de Fleys is made from 100% Chardonnay, with 20% fermented in French oak and 80% in stainless steel, then aged 16 months on fine lees for added creaminess and complexity. It shows aromas of peach, apple, apricot, white flowers, almond, and light spice.

On the palate, it is fresh, mineral, balanced, and elegant with a persistent finish. Ideal with seafood, shellfish, white meats, and aged cheeses, or any delicate, flavorful dishes.
