How to Enjoy

Bring salted water to a boil and cook the tagliatelle for 4–6 minutes. Warm the Chianina ragù gently in a pan or bain-marie. Drain the pasta, add it to the ragù, and toss delicately to coat. Serve immediately with a drizzle of extra virgin olive oil and freshly grated Parmigiano.

Tip: Save a small cup of pasta water — adding a splash helps bind the sauce beautifully.
