Title
After destemming, the grapes undergo maceration on the skins and fermentation at about 26°C for 15–20 days, with regular pump-overs and délestage to extract color and tannins. The wine then undergoes malolactic fermentation before ageing for 12 months in French oak tonneaux, followed by an additional 12 months in bottle before release.
Bright ruby red color. On the nose, it reveals aromas of sour cherries, myrtle, aromatic herbs, and violets. The palate is full-bodied and well-structured, with firm, intense tannins and a distinctive sapid finish typical of Aglianico from this terroir.
Excellent with lasagna, legume and cereal soups, or mixed boiled meats (bollito misto).
