Fermentation takes place in temperature-controlled truncated conical steel vats using délestage and regular pump-overs for approximately 18–20 days.

The wine shows expressive aromas of wild cherry and blackberry, layered with notes of graphite, eucalyptus, and cumin, finishing with a distinctly mineral edge.

Structured yet vibrant, it pairs beautifully with cinnamon-spiced lamb, rosemary-roasted vegetables, and bold, aged pecorino—an expressive Chianti with real charisma.
